Is there a way to have any pages I create with Simple Portal to be included in the default SMF search box?

I don't think there is one, bit don't quote me on that because search is one of those things I don't really understand (even though I almost completely overhauled xD=).

Nope, i dont think SP is included in SMF searches.

I made a small plug-in to do what you requested.
I did not spend a lot of time on it and there are currently limitations.
It will add a toggle link to your search title bar for pages or posts/topics.
When a user does a search they can toggle pages which will search simple portal pages for the words.
It will only work for HTML and BBC pages and ignores other types.
It will take a lot more work to intermix it with post/topic results and have the page selection work properly.
I opted for the toggle because this made it a lot easier for me to develop for now.
Also I opted only BBC & HTML pages because I would have to work on a complicated regex to get it to work with echoed text on PHP pages.
It does heed permission group settings for the requested pages.
Try it out & let me know if it functions and displays properly.
