It's "Sinan" written with Katakana (Japanese). I'm yet to learn Chinese.

Ah, you watched the 2003 version. I have only watched the 2009 version, Fullmetal Achemist: Brotherhood. I loved how they came up with an interesting sub plot every few episodes, contributing to the main plot and kept it up for so long. It's really a nice one.
