I would like to edit the information contained in the blocks like the User Info and Who's Online blocks, would somebody be so kind as to point me to the file I need to change to add or remove items?

You will want to edit the '{smf directory}/Sources/PortalBlocks.php' file.

Each block has its own function, the functions for the User Info and Who's Online blocks are sp_userInfo and sp_whosOnline respectively.
